Insights in the underlying principles are explored to bring a greater understanding to the process. We tap into the corresponding artisanal techniques, the mixing, the fermentation and shaping of the dough. Different types of flour and their baking properties are discussed.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph {\"fontSize\":\"medium\"} -->\r\n<p class=\"has-medium-font-size\"><strong>The circular bakery<\/strong>: <strong>reuse of old bread<\/strong><\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p><br \/>We use <strong>old bread <\/strong>as an ingredient to make better bread and\u00a0<a href=\"https:\/\/www.bakinglab.nl\/news\/bread-waste-a-key-ingredient-for-a-european-exhibition\/\">prevent further food waste<\/a>. We demonstrate how to use old bread during the workshops. What makes fermented food so different compared to cooked food? <br \/><br \/><strong>Ovens &amp; water<\/strong><br \/>We discuss the role of water, the magical molecule that astronomers often search for, why actually? We discuss the importance of a &#8220;good&#8221; oven and how the crust is formed and try to explain why baking bread <em>is not a piece of cake&#8230;.<\/em><br \/><br \/>The narrative of bread and it&#8217;s <a href=\"https:\/\/www.bakinglab.nl\/news\/elise-bakt-dankzij-de-wetenschap-beter-brood\/\">underlying science<\/a> allows us to connect the dots, revive our senses and bridge between our past (artisan) and future (modern science).<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p><strong>Food<\/strong><br \/>A snack or vegetarian \/ vegan food is included in some of our events.
