This way we unlock the flavours that are naturally present in the flour and the ones that are created by the microbes.<\/p>\r\n<p>We prevent our breads from quickly drying out through a procedure whereby old bread is reused as an ingredient. This allows us to develop special &#8211; sourdough &#8211; breads and demonstrate relatively simple ways to <a href=\"https:\/\/www.bakinglab.nl\/news\/bread-waste-a-key-ingredient-for-a-european-exhibition\/\">combat food waste. \u00a0<\/a>Our method of making bread has been selected as one of the\u00a0<a href=\"https:\/\/www.circulairondernemen.nl\/best-practices\/hergebruik-van-oud-brood-als-broodverbeteraar\">best practice examples<\/a>\u00a0by the\u00a0<a href=\"https:\/\/www.circulairondernemen.nl\/\">Dutch Circular Platform!<\/a><\/p>\r\n<p>You can also follow one of our courses and learn to bake bread at home.<br \/><br \/><strong>Sourdough starter<\/strong><br \/>You can buy sourdough starter in our store or<a href=\"https:\/\/www.bakinglab.nl\/en\/product\/sourdough-starter\/\"> in the webshop<\/a>.<\/p>\r\n<p>We sell a variety of breads and cakes and are constantly developing new ones. Some of our regulars are:<\/p>\r\n<ul>\r\n<li><em>Boule <\/em>&#8211; a french style bread baked straight on the stone. 50\/50 whole grain and white wheat flour. Fermented with instant yeast and sourdough.<\/li>\r\n<li><em>Batard\u00a0<\/em>&#8211; a grey bread with 12% rye, fermented with sourdough and baked on the stone<\/li>\r\n<li><em>&#8220;Circulairtje&#8221;\u00a0<\/em>&#8211; 50\/50 wholewheat, white flour. Fermented with yeast and a little sourdough. Rolled in seeds and baked in a tin.\u00a0<\/li>\r\n<li><em>&#8220;Zware Jongen&#8221;\u00a0<\/em>&#8211; 100% whole grain, full of roasted seeds and grains. Fermented with sourdough and baked in a tin.<\/li>\r\n<li><em>Rens Rye<\/em> &#8211; 50 % Rye, 50% white flour with seeds<\/li>\r\n<\/ul>\r\n<p><strong>Special breads<\/strong><br \/>Other breads are We make a delicious croissant pudding with blueberries and homemade lemon curd.<\/li>\r\n<li>Chocolate Fudge Cake &#8211; with hints of coffee and raisins, this is not just any chocolate cake.<\/li>\r\n<li>Vegan Carrot cake &#8211; filled with walnuts and almonds, and so creamy that a frosting is unnecessary.<\/li>\r\n<li>Canel\u00e9 and
