If food waste could be represented as its own country, it would be the third largest greenhouse gas emitter, behind China and the U.S. Reports also indicate that&nbsp;breadis the mostwastedfood in the&nbsp;Netherlands<strong>.<\/strong>&nbsp;According to an&nbsp;<a href=\"https:\/\/www.nrc.nl\/nieuws\/2019\/05\/10\/bijna-een-kwart-van-al-het-brood-gaat-verloren-dat-kan-wel-wat-minder-a3959832\">article<\/a>&nbsp;by NRC Handelsblad (10 May 2019), about&nbsp;25% of all breadin the Netherlands ends up aswaste<strong>.<\/strong><\/p>\n\n\n\n<p><strong>Research on ways to reuse old bread<\/strong><br>Baking Lab explores ways to&nbsp;<strong>reduce food waste<\/strong>. A good example is the way we reuse<strong>&nbsp;old bread<\/strong> as an ingredient to&nbsp;improve the flavour and quality of newly baked breads.&nbsp;<strong>Our circular baking approach has been selected as<\/strong> <a href=\"https:\/\/www.circulairondernemen.nl\/best-practices\/hergebruik-van-oud-brood-als-broodverbeteraar\">&#8220;a best practice&#8221;<\/a> by <a href=\"https:\/\/www.circulairondernemen.nl\">Nederland Circulair.<\/a> Nederland circular is an online community platform, promoting collaboration and knowledge sharing.. Entrepreneurs, employees and those interested in the circular economy can meet each other on this government platform to encourage new circular business models.<\/p>\n\n\n\n<p><strong>Social mission<\/strong> &amp; <strong>Informal education<\/strong><br>We organise workshops and programs related to food. We share the fundamental principles that underlie the fermentation processes and taste of our food.
