After baking sourdough for a while, you might be more curious about the underlying science of this natural and ancient fermentation process. There is a lot of data about sourdough floating out there on the internet but making sense out of it can be a challenge. In this workshop we will try to connect the science (facts) with our senses to support a meaningful narrative about baking with sourdough. This workshop should help you in the future to tweak or even develop your own recipes and methods.
Experienced – sourdough – bakers
- Explain key concepts related to working with sourdough.
- Sour flavor, its origin, strengths, and effects on baking
- Science & Senses: During the workshops we will do some short experiments and try to explain their results
- Translate fundamental knowledge into practical techniques and tap into the 3-Stage Detmolder process
Vegetarian and vegan food snacks from our café are included in the workshop.
In our courses we try to provide insight into how the baking process can take shape. Our goal is that students eventually learn to develop their own recipe, instead of repeating recipes from others.
